Fenchel
Fenchel (Foeniculum vulgare) ist eine ausdauernde krautige Pflanze, die in der Ordnung Doldenblütlerartige (Apiales) zur Familie Doldenblütler (Apiaceae) und hier in der Unterfamilie Apioideae zur Gattung Foeniculum zählt. Fenchel ist die einzige Art in dieser Gattung. Es gibt drei Abarten des Fenchel: Gemüsefenchel (Foeniculum vulgare var. azoricum) wird auch Knollenfenchel bzw. Zwiebelfenchel genannt.

Süßfenchel (Foeniculum vulgare var. dulce) wird auch als Gewürz-Fenchel bezeichnet. Bitter-Fenchel (Foeniculum vulgare var. vulgare) ist auch Wilder Fenchel bekannt. Fenchel ist als Gemüsepflanze, Heilpflanze und Gewürz weltweit verbreitet. Die Pflanzen erreichen Wuchshöhen von 40 bis 200 cm. Auffällig ist ihr Anisgeruch.
